Breakfast is one of the most skipped meals; we are all in a rush, and cooking breakfast is often skipped. But with little meal preparation, you can easily have a healthy breakfast every morning. In this post, I am sharing 10 breakfast meal prep ideas that are not just easy, but you can easily make in bulk on the weekend and have grab and go breakfast for work. I have tried to keep this breakfast list simple but meaningful, with a mix of sweet and savory breakfast recipes.

English Muffin Sandwich

For a mess-free morning meal. Sandwiches are my favorite, but if you are bored with bread, you must try this English Muffin Sandwich. In an egg pan, toast a muffin, split in half, and cook an egg. You can add seasoning if you like. I like to add some salt and pepper. Now assemble egg on English muffin halves with cheese and deli turkey. Add your favorite dressing to the other muffin half.
It’s quick to make in the morning. You can wrap each individually in parchment or wax paper and store them in a freezer-safe bag for an easy meal. To eat, just remove the wrap and microwave it. When reheating, place a cup of water inside the microwave to keep the bread soft.
Make Ahead Overnight Oats

For a quick, no-cook breakfast when I have no time and am in a hurry. I love overnight oats with berries. It’s like a sweet treat but nutritional. In a bowl or mason jar, add rolled oats, milk of choice, or yogurt, stir well, and refrigerate overnight. Morning, just mix it well, add fruit or flavors of your choice along with honey, top with nuts or fruits, and you are ready to go.
Just grab a jar and eat it at your desk or on the commute. It’s also perfect for busy families, as you can customize it with toppings, and it is kid-approved. You can make it in bulk and store it in the fridge for up to 4–5 days. And vary the toppings each day.
Breakfast Burrito
One of the fillings and easy make-ahead breakfast ideas is a breakfast burrito. I sometimes use it even for lunch or a quick dinner. Make scrambled egg or an omelette if you want a neat filling by mixing egg with veggies of choice, salt, and seasoning. Spread it on tortillas and wrap it like a burrito or just fold on half. Make sure to warm the tortillas so they don’t tear. Wrap in a paper and store in a freezer-safe bag. You can easily store them for a week, just reheat them before eating.
Sometimes I chop and keep everything ready and just add egg and quickly make them fresh in the morning.
Breakfast Pitas

Another great, quick breakfast option is breakfast pita bread. You can fill with filling of your choice. I like to use the filling of scrambled eggs made with spinach, bell pepper, mild seasoning, and cheese. You can make filling based on dietary preference with tofu, chicken, or just veggies.
Just make the filling on the weekend and on a busy morning, warm the pita bread, cut it in half, and add a generous filling to the pita pocket. It’s wholesome, filling, and a no-mess breakfast on the go.
Breakfast Granola Cups

If you want something new that kids will love too. You must try yogurt-filled granola cups. Mix oats with shredded coconut, honey, cinnamon, a bit of coconut oil, and press the mix into a muffin liner and bake till crisp. Once cooled, fill them with your favorite flavored yogurt or plain yogurt and top with fresh berries, nuts, and honey.
You can store the baked granola cups at room temperature for a week. Just add the yogurt and berries in the morning before serving.
Make Ahead Corn Casserole

For a warm and comforting breakfast, you can try corn casserole. It’s easy to make, and you can also make it ahead of time. Just blend together equaly part of corn kernel, creamed corn, and half a part of dry cornbread mix with some cream, melted butter, and an egg. Bake it until golden and sprinkle cheese on top.
You can prepare this casserole on the weekend and store it in the fridge for up to 4–5 days in air-tight containers, just reheat the portion you need.

Sandwiches are an easy, mess-free breakfast option that you can grab on the go and even have for breakfast at work. This protein-packed bagel sandwich is perfect for busy mornings.
As part of meal prep, just boil eggs. Toast a bagel cut in half and spread cream cheese, and layer sliced boiled eggs on the bottom half and season with salt and pepper. Add some arugula or any greens like lettuce, and your sandwich is ready. Its east to meal prep and make too. You just need a minute to assemble in the morning to enjoy a fresh breakfast. Breakfast Pinwheel

If you want to try something different for breakfast, this is one good option. It’s not just tasty, but freezer-friendly, so you just need to toss it in the oven to bake while you get ready for work, and you will have a freshly baked, healthy breakfast.
Make a filling with finely chopped sausages, scrambled eggs with salt, pepper, and fresh herbs. Roll out store-bought crescent roll dough. Spread the sauce of your choice; we like tomato sauce. Spread the filling evenly, followed by some shredded cheese. Roll it tightly and cut the pinwheels. You can store them in the freezer for the week. Just take a few in the morning, and just bake for 15 minutes at 350°F. And you have a fresh breakfast ready.
French Toast Casserole

For those who like a sweet breakfast, just like my daughter, and do not like to spend a long time cooking in the morning. A French toast casserole is a good breakfast choice. You don’t need to make them individually and save time.
Grease the casserole with butter and add to it cubes of bread. In a bowl, whisk eggs, sugar, milk, cinnamon, and a drop of vanilla. Pour it over it evenly over the bread. And bake at 350°F for 25 to 20 minutes. Cool it and drizzle some honey and nuts before eating. You can store the casserole after covering it in the freezer for a week. You can reheat it in the morning after thawing overnight. You can also prepare the casserole the night before and store it in the fridge, and just bake it in the morning.
